Quick answer

Fresh (raw) Polish sausage can be baked at 375°F (190°C) in a baking dish with about an inch of water, for roughly 40 minutes, turning once halfway. The water keeps the sausage moist and helps prevent the casing from splitting. It is done when the center reaches 160°F (71°C). For a browner skin, drain the water and bake uncovered for the last 5 to 10 minutes.

Fresh vs. fully cooked Polish sausage

This is the most important thing to check first, because the two types are cooked very differently.

  • Fresh (raw) Polish sausage, often sold as “fresh kielbasa” or “biała kiełbasa,” is uncooked pork sausage. It must be cooked all the way through.
  • Smoked kielbasa, the type commonly sold in a curved horseshoe-shape in many supermarkets, is usually sold fully cooked, and only needs reheating. Check the label to be sure.

So, is kielbasa fully cooked? Often the smoked kind is, but fresh kielbasa is not. If the package says “fresh,” “raw,” or “cook thoroughly,” treat it as raw meat.

Method 1: baking fresh sausage in a little water

  1. Heat the oven to 375°F (190°C).
  2. Place the links in a single layer in an oven-safe baking dish.
  3. Add water, and if you like, a little beer or broth, to about 1 inch deep, so the sausages are partly covered.
  4. Bake for about 40 minutes, turning the links once around the 20-minute mark.
  5. Check the center with an instant-read thermometer for 160°F (71°C).
  6. For crisper skin, pour off the liquid and return the dish to the oven for 5 to 10 minutes, or finish under the broiler while watching closely.

Sliced onions in the dish add flavor to the cooking liquid.

Method 2: dry roasting on a sheet pan with vegetables

If you prefer browned sausage without a water bath, roast it on a sheet pan with vegetables.

  1. Heat the oven to about 400°F (205°C).
  2. Toss sliced bell peppers and onions with olive oil, salt and pepper, and spread on a rimmed baking sheet.
  3. Nestle the fresh sausages among the vegetables.
  4. Bake, turning once, until the sausages are browned and the center reaches 160°F (71°C). Expect roughly 25 to 35 minutes depending on thickness.

Because fresh sausage has a delicate texture, handle it gently with tongs. Some cooks do a short stovetop browning first, but it is not required.

Do you need to pre-cook the sausage before baking it with vegetables? No, as long as it bakes until it reaches the safe temperature. Just make sure the vegetables are not so crowded that they steam and slow down the cooking.

Fully cooked kielbasa in the oven

For smoked, fully cooked kielbasa, you are heating rather than cooking. At 400°F (205°C), cut or whole links usually need about 15 to 20 minutes to heat through and brown, depending on size. Heat to a steaming 165°F (74°C), which is the usual recommendation for reheating precooked sausages. Cutting into pieces shortens the time.

On the stove

You can also cook kielbasa in a skillet. Brown the links in a little oil, add a splash of water, cover, and cook gently until hot all the way through. For fresh sausage, simmer gently in water for around 20 to 30 minutes, then brown in a pan if you like, and confirm the center is 160°F (71°C). Avoid a hard boil, since it can split the casings. Our guide to cooking bratwurst on the stove shows a similar sear-and-steam method that also works for fresh Polish sausage.

How to tell it is done

Use a thermometer in the thickest part of the sausage. Fresh pork sausage should reach 160°F (71°C). Sources vary slightly, with some Polish sausage guides recommending 160 to 165°F, so aim for at least 160°F. The meat should look opaque with no pink.

Serving and storing

Serve with sauerkraut, mustard, potatoes, pierogi or roasted shishito peppers. A pan of beer-braised cabbage is a classic side; see our recipe for cooking sauerkraut in beer. If you enjoy this oven approach, the same ideas apply to Italian sausage in the oven and brats in the oven.

Refrigerate leftovers within two hours and eat within a few days. To reheat, warm in the oven or a skillet until steaming hot.

How long to cook fully cooked sausage in the oven at 400 degrees? Typically about 15 to 20 minutes, until hot throughout.

How to cook kielbasa on the stove? Brown it in a skillet, add a splash of water, cover and heat until hot in the center.
